This is how cha yen was born — a strong red tea with milk and sugar, one of the main flavours of the Thai street. Later, tapioca was added to the Asian love of mixing all the best in one glass. At Alexander Rappoport's IndoKitaj , these two traditions have met in a new line of bubble tea. Three drinks — and each in its own way explains why Asia once decided that tea can not only be drunk but almost eaten. Cloudy cha yen with coconut and mango jelly (550 RUB) — red Thai tea, milk and coconut milk, tapioca and pineapple. Creamy, spicy, tropical — the very cha yen, only in a more dressed-up version. Matcha Pandan with almond milk and lychee jelly (550 RUB) combines matcha, pandan, almond milk, tapioca and lychee. Here there is less sweetness and more nuance: nutty notes give way to herbaceous ones, followed by a floral-fruity aftertaste. Banana cream with black tea, banana, coconut milk and ginger (550 RUB) — the most dessert-like of the three. Banana and coconut are responsible for density and creaminess, cha yen — for character, ginger — for the necessary piquancy. After all, we are at IndoKitaj . And all of this feels quite organic where Thai curry simmers for hours in huge vats, and the night market of Southeast Asia exists practically in the centre of Moscow. Previously, one could come here for spicy noodles; now there is another reason — a large straw and a glass containing too much of everything good to simply call it tea.
