In honor of City Day, Rappoport's Restaurants have gathered dishes and drinks inspired by the capital, its history, and its iconic landmarks. Here you can taste dishes that might have been on the tables of Muscovites centuries ago, and revisit the Moscow history of Olivier salad and "Bird's Milk" cake. At the Voronezh restaurant, for City Day, special attention should be paid to the "Moscow Province" section on the breakfast menu. The section is based on the idea of what residents of Moscow and the Moscow Governorate might have eaten in different eras. Life here for a long time combined rural and urban traditions: people grew grain and kept livestock, while also engaging in crafts and trade. Chef Sergey Volkonenkov has reinterpreted this connection to the past in the menu. One such dish is buckwheat porridge with giblets and porcini mushrooms (890 RUB), prepared with fried onions, chicken hearts, gizzards, and liver. Alongside it — pelmeni with beef and broth (990 RUB): at Voronezh, the filling is made from marbled beef neck with tomatoes and cilantro. The familiar name "pelmeni" became established later, but similar dishes of dough with meat filling appeared in Russian cuisine much earlier. The "Moscow Province" section also includes tastes of the capital from the 20th century. The fried sausage sandwich (780 RUB) is made with Doktorskaya sausage — a product whose Soviet-era production was linked to Moscow's Mikoyan Meat Processing Plant. The meat patty sandwich with pickled cucumber sauce (1,100 RUB) references the Soviet version of the "hamburger": Volkonenkov prepares it with a pheasant patty and cucumber relish on a brioche bun. The section also features omelette with crab in clarified butter (1,990 RUB), omelette with fried sausage (850 RUB), and cottage cheese ring with fresh strawberries (890 RUB).
