This Easter bread (kulich) embodies the bright spring celebration. A dense cap of matte white glaze covers the kulich, and atop it rests a lollipop rooster — a nod to childhood and folk motifs that are now experiencing a renaissance in gastronomy. The kulich is presented in two versions. In the first, delicate feathers — the very same ones used for writing two centuries ago — are scattered around the rooster. In the second, yellow sunflowers rest casually beside the rooster. The kulich can be purchased at the restaurant from April 6 to 12, with pre-orders accepted through April 8 inclusive.
