North-West: Moscow Gastronomic Festival set at Mashenka"Mashenka" at the "Inspiration. Russia" festival: Igor Grishichevkin's set — Karelian fish soup, Ladoga pike-perch, porcini mushroom ice cream. 3,000 RUB. From October 10 to November 9.From October 10 to November 9, Mashenka is taking part in the Moscow Gastronomic Festival. This year's theme is "Inspiration. Russia": chefs were invited to choose a product, region or technique connected to their own gastronomic history and tell its story in the format of a signature set. For Igor Grishichevkin , such a point on the map became the North-West of Russia. He spent a significant part of his professional life in this region and worked extensively with local products. The set turned out not to be an attempt to stylise the cuisine to a particular geography, but a return to well-known flavours. Fish, mushrooms, lingonberries and root vegetables come together in three dishes, and each in its own way recalls northern nature. The first dish is "Lohikeitto" — Karelian fish soup with cream. The rich trout soup is prepared with heavy cream, crumbly spelt, carrots and leeks. The result is a dense, warming version of one of the region's most recognisable dishes. The theme continues with Ladoga pike-perch with smoked celeriac, spinach and charcoal oil . The fish from Lake Ladoga is served with lightly smoked celeriac purée, braised spinach and soaked lingonberries. Everything is brought together by a sauce based on fish broth with smoked oil infused over coals. The northern theme is revealed through smoke, forest notes and the fish characteristic of the region. The finale is porcini mushroom ice cream with pine cone candied fruit . The rich mushroom flavour is complemented by candied young pine cones and crispy porcini mushroom chips. In taste and presentation, the dessert becomes a literal reference to the autumn forest. The northern theme continues in the warming and spicy cocktail by head bartender Alexandra Vodnitskaya , built on a combination of cloudberry, pine nut and spices.
