The spacious terrace, immersed in greenery, features panoramic glass and a retractable roof, and is now enhanced with spectacular evening lighting and a veritable red carpet. It's truly a veranda to shine. Not only will guests be able to shine on the updated veranda, but so will the new summer menu from Black Thai chef Artem Martirosov. A firework of vibrant flavors begins with the cold appetizers: the chef prepares a fresh salmon tartare roll with seasonal nectarines, pineapple puree, basil, and ginger; he adds green mango to the fresh eel roll and serves it with a shrimp paste sauce; and the spring roll combines Kamchatka crab and minced shrimp with flying fish roe. For the hot appetizer, Artyom marinates roast beef in oyster sauce and grills it over coals, and prepares bok choy and shiitake mushrooms in a vibrant sauce with chili paste and dong gu sauce. Black Thai's summer menu includes two cold soups, and both are excellent. The chef prepares a fresh green soup with spinach in coconut milk, sorrel, plenty of cilantro, lime juice, and basil. It's served with a salsa of poached zucchini, pomelo segments, cucumber, and avocado. An even more striking and vibrant tropical soup of mango and pumpkin with lemongrass and chili is served with coconut milk jelly, sautéed tiger prawns, and edible flowers. Hot dishes include succulent tiger prawn kebab with a vibrant purple basil sauce and sautéed spinach, and baked salmon steak in fish sauce with miso-carrot cream and eryngii mushrooms marinated in fermented green chili, aloe honey, basil, and garlic.
